Sustainable CateringOh how I love a good challenge! This year’s Special Event Conference was held in New Orleans, LA from January 11th-14th. Because we have friends who live in the area, I contemplated the trip for weeks. When Shirley de Rose from the Sustainable Catering Association called and shared the predicament their Association was in with their scheduled speaker not being able to fulfill the engagement; I was at best intrigued. After discussing the seminar topic: Sustainable Catering – fad or solid business strategy?, I  began my plan of attack. I was mostly concerned with the 2 hour presentation and how I could fill all those minutes! I researched, labored over the particulars, outlined and strategized how this would all come together. With the advice of Shirley, my business counselor Dr. Thomas Jones, ACEP Vice President Mark Lopez (Crave Catering) & President Don Richardson (Digital Popcorn), Kevin O’Malley (Kayak Marketing), Chelsea Sprague (The Cummings Group) who helped create a great professional power point presentation, Becki and my family who supported me through the decision making process; I decided I was on board to deliver!
